Roast Pork Chops with Apple and Celery Salad

  • 4 x 175 g (6 oz) pork chops
  • 1 tablespoon olive oil
  • 1 teaspoon fennel seeds
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2–3 sage leaves, chopped
  • 4 dessert apples, cored and thinly sliced into rings
  • 3 celery sticks, thickly sliced
  • 12 green grapes, halved

  • Brush the chops with the olive oil and sprinkle with the fennel seeds and pepper.
  • Place on a rack over a roasting tray and bake in a preheated oven, 200˚C (400˚F), Gas Mark 6, for 20 minutes.
  • Meanwhile, whisk the extra virgin olive oil, vinegar and sage together to make a dressing.
  • Toss the apples, celery and grapes together with the dressing and serve with the roasted chops.
