Ricotta with Warm Cinnamon Honey

  • 500 g (1 lb) ricotta cheese
  • 8 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • handful of raspberries, to serve
  • Line 4 x 125 ml (4 fl oz) dariole moulds with clingfilm. Press the ricotta into the moulds, then place in the freezer for 5 minutes.
  • Meanwhile, gently warm the honey and cinnamon in a small saucepan.
  • Remove the ricotta moulds from the freezer and invert on to plates. Remove the clingfilm and pour over the warm syrup. Serve with a few raspberries.
