Rice Pudding and Jam Brûlée

  • 4 tablespoons strawberry or raspberry jam
  • 2 tablespoons orange juice
  • 625 g (1 1/4 lb) canned creamed rice pudding
  • 6 tablespoons demerara sugar
  • Mix together the jam and orange juice and spoon into the base of 4 heatproof dishes.
  • Spoon the rice pudding over the top and sprinkle evenly with the sugar.
  • Place the puddings under a preheated hot grill, as near to the heat as possible, and grill for 2–3 minutes until the sugar is melted and bubbling. Leave for a few minutes for the topping to cool and set before eating.
