Place the rice in a large bowl and add water to cover. Leave to steep for at least 1 hour, then drain and turn it out on a clean cloth.
Heat the water in the bottom compartment of a rice-cooker or steamer. Place the cloth containing the rice in the upper compartment. Cover and steam for 10 minutes.
Open the cloth, let the rice cool for 1 minute then turn it into a deep dish.
Pour over the coconut milk, sprinkle with salt and serve warm.
Use small coffee cups as moulds for the rice then turn out the little domes of rice onto small plates.
Eat with your fingers or a small spoon.
