Ratatouille Pizza

  • 2 x 400 g (13 oz) cans ratatouille
  • 2 crushed garlic cloves
  • 4 tablespoons tomato purée
  • 6–8 basil leaves, roughly torn
  • 4 x gluten-free pizza bases
  • 125 g (4 oz) grated mozzarella cheese
  • drizzle of olive oil
  • salt and pepper
  • Mix together the ratatouille, garlic, tomato purée and basil leaves and season with salt and pepper.
  • Place the pizza bases on 2 baking sheets, then spoon over the ratatouille mixture.
  • Sprinkle over the grated mozzarella, drizzle with the oil and bake in a preheated oven, 220˚C (425˚F), Gas Mark 7, for 25 minutes, until hot and bubbling.
