Raspberry Yogurt Gratin

  • 400 g (13 oz) raspberries
  • 350 g (11 1/2 oz) fat-free Greek yogurt
  • 1 teaspoon vanilla bean paste or extract
  • 1 tablespoon cassis
  • 2 tablespoons light brown sugar
  • Preheat the grill. Place the raspberries in an ovenproof gratin-style dish.
  • Beat the yogurt with the vanilla bean paste or extract and cassis in a bowl, then spoon over the raspberries, levelling the surface.
  • Sprinkle the brown sugar evenly over the yogurt mixture, then slide under the grill for 5–6 minutes to melt the sugar. Cool slightly then serve.
