Ingredients
  • 400 g (13 oz) frozen raspberries
  • 1 tablespoon raspberry liqueur or lemon juice
  • 200 g (7 oz) mascarpone cheese
  • 2 tablespoons icing sugar
  • ice cream wafers, to serve
Directions

Place the frozen raspberries in a food processor with the raspberry liqueur or lemon juice and blend until roughly chopped.

Add the mascarpone and icing sugar and blend until smooth. Serve immediately with ice cream wafers.
