Raspberry & Mascarpone Brioche

  • 4 slices of brioche or raisin bread
  • 250 g (8 oz) raspberries
  • 250 g (8 oz) mascarpone cheese
  • 2 tablespoons single cream
  • seeds from 1 vanilla pod
  • 1–2 tablespoons icing sugar, plus extra to dust

Make the vanilla mascarpone. Stir the mascarpone, cream, vanilla seeds and icing sugar together until smooth – do not overbeat.

Toast the brioche slices on a medium barbecue for 30 seconds on each side until lightly browned. Top with the raspberries and vanilla mascarpone and dust with icing sugar.
