Quick Summer Fruit Ice Cream

  • 500 g (1 lb) frozen summer fruits
  • 50 g (2 oz) icing sugar
  • 1 tablespoon clear honey
  • 400 g (13 oz) can custard
  • sugar strands, to decorate
  • Reserve a few of the fruits for decoration. Place the remaining fruits in a food processor with the icing sugar and honey and blend until smooth.
  • While the motor is running, slowly pour in the custard until the mixture is thick and forms a soft ice cream.
  • Spoon into paper cups or bowls, then sprinkle with sugar strands before serving.
