200 g (7 oz) cocktail-sized cooked sausages, halved
Parmesan cheese, grated
Heat the olive oil in a deep-sided frying pan and cook the garlic and spring onions over a medium heat for 1 minute, until slightly softened. Add the mushrooms and cook for about 5 minutes, stirring occasionally, until soft and golden.
Add the pasta sauce and sausages and stir over the heat for 2–3 minutes, until hot. Serve immediately with plenty of crusty bread and grated Parmesan.
