Quick Sausage and Mushroom Stew

  • 2 tablespoons olive oil
  • 2 garlic cloves, sliced
  • 2 spring onions, sliced
  • 250 g (8 oz) chestnut mushrooms, halved
  • 700 g (1 lb 7 oz) tomato pasta sauce
  • 200 g (7 oz) cocktail-sized cooked sausages, halved
  • Parmesan cheese, grated
  • Crusty bread
  • Heat the olive oil in a deep-sided frying pan and cook the garlic and spring onions over a medium heat for 1 minute, until slightly softened. Add the mushrooms and cook for about 5 minutes, stirring occasionally, until soft and golden.
  • Add the pasta sauce and sausages and stir over the heat for 2–3 minutes, until hot. Serve immediately with plenty of crusty bread and grated Parmesan.
