• 2 tablespoons olive oil
  • 16 cocktail sausages
  • 2 garlic cloves, crushed
  • 400 g (13 oz) can chopped tomatoes
  • 400 g (13 oz) can baked beans
  • 200 g (7 oz) can mixed beans, drained and rinsed
  • ½ teaspoon dried thyme
  • salt and pepper
  • 3 tablespoons chopped flat leaf parsley, to garnish

Heat the oil in a frying pan, add the sausages and cook until browned all over.

Transfer the sausages to a large saucepan and add all the remaining ingredients. Bring to the boil, then reduce the heat, cover tightly and simmer for 20 minutes. Season to taste with salt and pepper and serve hot, garnished with the chopped herbs.
