Special Diet

  • 4 mini pizza bases
  • 2 garlic cloves, halved
  • 250 g (8 oz) reduced-fat mozzarella cheese, shredded
  • 8 cherry tomatoes, quartered
  • 150 g (5 oz) prosciutto, sliced
  • 50 g (2 oz) rocket leaves, washed
  • balsamic vinegar, to taste
  • salt and pepper

Rub the top surfaces of the pizza bases with the cut faces of the garlic cloves.

Put the pizza bases on a baking sheet, top with mozzarella and tomatoes and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 10 minutes until the bread is golden.

Top the pizzas with slices of prosciutto and rocket leaves, season to taste with salt, pepper and balsamic vinegar and serve immediately.
