Quick Kiwifruit and Ginger Cheesecake

  • 75 g (3 oz) gingernut biscuits
  • 100 g (3 1/2 oz) reduced-fat cream cheese
  • 75 g (3 oz) low-fat crème fraîche
  • 1 piece of stem ginger, about 15 g (1/2 oz), chopped
  • 1 tablespoon stem ginger syrup
  • 2 kiwifruit, peeled and sliced
  • Put the gingernut biscuits in a plastic bag and crush them using a rolling pin. Sprinkle the crushed biscuits over the bottom of 4 glass serving dishes.
  • Beat the cream cheese, crème fraîche, stem ginger and syrup in a bowl, then spoon the mixture over the biscuits. Arrange the kiwifruit on top of the cheesecake and serve.
