Quick-Cook Pasta with Chillies and Anchovies

  • 200 g (7 oz) quick-cook pasta (such as spaghetti or penne)
  • 2 tablespoons olive oil
  • 1/2-1 red chilli, deseeded and chopped
  • 6 anchovies, drained and diced
  • 1 tablespoons lemon juice
  • pepper
  • Cook the pasta in a large pan of lightly salted boiling water for 3–5 minutes or according to the packet instructions until just tender. Drain the pasta, reserving 1 tablespoon of the cooking liquid.
  • Toss with the remaining ingredients and reserved cooking liquid, then heap into warmed bowls to serve.
