Quick & Easy Miso Soup

  • 1 quantity vegetable stock (see page 190)
  • 2 tablespoons miso paste
  • 125 g (4 oz) shiitake mushrooms, sliced
  • 200 g (7 oz) firm tofu, cubed

Put the stock in a saucepan and heat until simmering.

Add the miso paste, shiitake mushrooms and tofu to the stock and simmer gently for 5 minutes. Serve immediately with rice.
