Combine the dough balls and roll the dough out thinly on a well-floured work surface into a rectangle. Following the long side of the rectangle, cut into 5 mm (¼ inch) strips. Lightly roll each strip and taper the ends.
Brush the grissini lightly with water and sprinkle with the flavouring of your choice. Transfer to a baking sheet and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 5–8 minutes until crisp and brown. Leave to cool completely.
Twist strips of prosciutto around the grissini to serve.
