Prawn Salad with Peanut Sauce

  • 200 g (7 oz) dried thin rice noodles
  • 6 tablespoons crunchy peanut butter
  • 1 tablespoon sweet chilli sauce
  • 2 tablespoons soy sauce
  • 4 tablespoons boiling water
  • 200 g (7 oz) cooked peeled large prawns
  • 1/2 iceberg lettuce, shredded
  • 1 large carrot, cut into matchsticks
  • 1/2 cucumber, cut into matchsticks
  • 2 spring onions, shredded
  • Soak the rice noodles according to the pack instructions. Mix the peanut butter with the chilli sauce, soy sauce and measurement water until smooth.
  • Drain the noodles, cool under cold running water and drain again. Toss with the remaining ingredients, season with salt and pepper, then drizzle over the sauce to serve.
