Special Diet

  • 1 tablespoon groundnut oil
  • 4 teaspoons cumin seeds
  • 1 teaspoon medium curry powder (see page 16)
  • 1 fresh green chilli, finely sliced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 4 plum tomatoes, peeled, deseeded and finely diced
  • 500 g (1 lb) baby new potatoes, halved and boiled
  • 400 g (13 oz) French beans, cut into 1 cm (½ inch) lengths and blanched
  • 6 tablespoons chopped mint leaves
  • juice of 1 large lime
  • salt and pepper

Heat the oil in a large nonstick wok or frying pan over a medium-high heat. Add the cumin seeds, curry powder and green chilli and stir-fry for 1–2 minutes until fragrant.

Add the ground spices, tomatoes, potatoes and green beans. Season to taste and stir-fry briskly over a high heat for 4–5 minutes. Remove from the heat and stir in the mint. Squeeze over the lime juice and serve immediately.
