Pork Chops with Plum Ginger Relish

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 tablespoon grated fresh root ginger
  • 4 plums, pitted and sliced
  • 1 tablespoon soft brown sugar
  • 1 teaspoon red wine vinegar
  • finely grated rind of 1/2 orange
  • 100 ml (3 1/2 fl oz) water
  • 4 pork chops
  • handful of watercress, to serve
  • salt and pepper
  • Heat 1 tablespoon oil in a small pan, add the onion and cook for 5 minutes until softened. Add the ginger, plums, sugar, vinegar, orange rind and measurement water and simmer for 10 minutes until soft. Season to taste.
  • Meanwhile, rub the remaining oil over the chops and season. Cook under a hot grill for 5 minutes on each side until just cooked through. Serve with spoonfuls of the relish and some watercress.
