Ingredients
  • 1 tablespoon groundnut oil
  • 2 garlic cloves, finely chopped
  • 1 large dried chilli, deseeded and chopped
  • 200 g (7 oz) minced pork
  • 40 g (1½ oz) French beans, cut into 1 cm (½ inch) lengths
  • 1 tablespoon Thai fish sauce (nam pla)
  • 30 g (¾ oz) roasted peanuts, roughly chopped
  • 1 tablespoon water
  • 2 tablespoons light soy sauce
  • ¼ teaspoon caster sugar
  • 8 little gem leaves
  • sweet chilli sauce, to serve
Directions

Heat the oil in a large wok over a medium heat until the oil starts to shimmer. Add the garlic and dried chilli and stir quickly for a few seconds. Add the minced pork and stir-fry for 4–5 minutes until the meat has become golden.

Add the French beans and cook for 1 minute, then add the fish sauce, peanuts, measurement water, soy sauce and sugar and cook for 1 more minute. Spoon into the lettuce leaves and serve with some sweet chilli sauce on the side.
