  • 2 tablespoons olive oil
  • 1 teaspoon ground coriander
  • 4 thick pork chops
  • 4 sweet potatoes, peeled and cut into wedges
  • 4 garlic cloves, unpeeled
  • 2 tablespoons honey
  • grated rind and juice of 1 lime
  • handful of coriander leaves, chopped
  • 1 red chilli, deseeded, if liked, and sliced
  • 2 spring onions, sliced
  • salt and pepper
  • lime wedges, to serve

Place the oil and ground coriander in a small bowl and mix together, then season well. Toss the pork chops, sweet potatoes and garlic in the oil and spread out on a shallow baking tray. Place in a preheated oven, 220°C (425°F), Gas Mark 7, for 10 minutes.

Meanwhile, stir together the honey and lime rind and juice in a bowl. Turn the meat and sweet potatoes over, then drizzle over the honey sauce. Return to the oven for a further 5–10 minutes until golden and cooked through.

Scatter over the chopped coriander, chilli and spring onions and serve with lime wedges.
