Poached Apricots with Orange Flower Water and Pistachios

  • 400 g (13 oz) ready-to-eat semi-dried apricots
  • 350 ml (12 fl oz) apple and elderflower juice
  • 2 tablespoons orange flower water
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons clear honey
  • 75 g (3 oz) shelled unsalted pistachios, crushed
  • Put the apricots in a pan with the apple and elderflower juice, orange flower water, cinnamon and honey and bring to a gentle boil over a medium-high heat. Reduce the heat and simmer for 2–3 minutes until fragrant.
  • Pour the apricots and juices into a large bowl and set aside to cool slightly.
  • Serve in deep bowl, scattered with the pistachios.
