Special Diet

  • 30 g (1½ oz) desiccated coconut
  • 50 g (2 oz) breadcrumbs
  • 2 tablespoons chopped chives
  • pinch of paprika
  • 4 skinless plaice fillets
  • salt and pepper
  • lime wedges, to serve

Mix together the coconut, breadcrumbs, chives and paprika and season to taste.

Arrange the fish fillets on a baking sheet, top each one with some of the coconut mixture and cook in a preheated oven, 180°C (350°F), Gas Mark 4, for 15 minutes.

Serve the fish with lime wedges and accompanied with baked potatoes and a rocket salad, if liked.
