Pizza Palmiers

  • 3 tablespoons ready-made pizza sauce
  • 25 g (1 oz) anchovies in oil, drained and finely chopped
  • 375 g (12 oz) chilled ready-rolled puff pastry
  • 1 teaspoon dried oregano
  • 3 tablespoons finely grated Parmesan cheese
  • Line 2 large baking sheets with nonstick baking paper. Place the pizza sauce in a bowl and stir in the anchovies.
  • Unroll the pastry on a clean surface and spread thinly with the pizza sauce. Scatter with the oregano and sprinkle the cheese evenly over the top. Roll the long sides of the pastry into the centre, then cut into 30–40 x 1 cm (1/2 inch) slices and place on the prepared baking sheets.
  • Bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 10–12 minutes until puffed up, crisp and golden. Transfer to wire racks to cool slightly, then serve warm.
