1/2 pineapple, peeled, cored and cut into 16 chunks
crudites, to serve (optional)
Cut the bacon or gammon into 24 chunky pieces. Heat 1 tablespoon of the oil in a heavy-based frying pan and cook the bacon or gammon pieces over a medium-high heat for 5–7 minutes until cooked through and golden in places. Add the honey and parsley and toss to coat the ham pieces. Keep warm.
In a separate frying pan, heat the remaining oil and cook the pineapple chunks over a high heat for 4–5 minutes until golden and hot.
Thread 3 chunks of ham and 2 chunks of pineapple on to 8 small bamboo skewers and serve with crudites.
