Pineapple and Chunky Ham Skewers

  • 500 g (1 lb) bacon or gammon piece
  • 2 tablespoons olive oil
  • 1 teaspoon wholegrain mustard
  • 2 tablespoons clear honey
  • 1 tablespoon chopped parsley
  • 1/2 pineapple, peeled, cored and cut into 16 chunks
  • crudites, to serve (optional)
  • Cut the bacon or gammon into 24 chunky pieces. Heat 1 tablespoon of the oil in a heavy-based frying pan and cook the bacon or gammon pieces over a medium-high heat for 5–7 minutes until cooked through and golden in places. Add the honey and parsley and toss to coat the ham pieces. Keep warm.
  • In a separate frying pan, heat the remaining oil and cook the pineapple chunks over a high heat for 4–5 minutes until golden and hot.
  • Thread 3 chunks of ham and 2 chunks of pineapple on to 8 small bamboo skewers and serve with crudites.
