1/4 small red pepper, cored, deseeded and roughly sliced
1/4 small yellow pepper, cored, deseeded and roughly sliced
1/4 small green pepper, roughly sliced
50 g (2 oz) pepperoni slices, roughly chopped
4 tablespoons grated Cheddar cheese
Place the pizza base mix in a bowl with the oregano, add warm water according to the packet instructions and mix to form a smooth dough. Turn out on to a lightly floured surface and knead until smooth.
Heat the oil in a heavy-based frying pan and cook the peppers over a medium heat for 4–5 minutes until soft, then add the pepperoni and cook for a further minute.
Divide the dough into 8 pieces and make a well in the centre of each. Divide the peppers and pepperoni between the dough pieces and very roughly knead through the dough. Shape each into a rough ball and place on a baking sheet.
Sprinkle with the Cheddar and bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 20 minutes until golden and cooked through – the base should sound hollow when tapped. Serve warm.
