  • 400 g (13 oz) dried spaghetti
  • 5 tablespoons olive oil
  • 5 garlic cloves, finely chopped
  • 6 vine-ripened tomatoes, deseeded and chopped
  • 25 g (1 oz) basil leaves
  • salt and pepper

Cook the pasta in a large saucepan of salted boiling water according to the packet instructions.

Meanwhile, heat the oil in a frying pan, add the garlic and cook over a low heat for 1 minute. As soon as the garlic begins to change colour, remove the pan from the heat and add the remaining oil.

Drain the pasta and return to the pan. Add the garlic oil with the chopped tomatoes and basil leaves. Season to taste with salt and pepper and toss well to mix. Serve immediately.
