Pasta with Salmon, Rocket and Red Onion

  • 400 g (13 oz) casareccia pasta
  • 100 ml (3 1/2 fl oz) dry white wine
  • 150 ml (1/4 pint) double cream
  • 250 g (8 oz) smoked salmon, cut into strips
  • 75 g (3 oz) rocket leaves
  • 1/2 red onion, thinly sliced
  • grated rind of 1/2 lemon
  • 2 teaspoons capers, rinsed and drained
  • salt and pepper
  • Cook the pasta in a large saucepan of salted boiling water according to the pack instructions until al dente.
  • Meanwhile, heat the wine in a saucepan until boiling, then reduce the heat and simmer for 5 minutes. Stir through the cream, season and leave to bubble for a couple of minutes.
  • Drain the pasta, reserving a little of the cooking water, and return to the pan. Stir through the sauce, adding a little cooking water to loosen if needed. Toss through the remaining ingredients and serve immediately.
