Pasta-Packed Baked Red Peppers

  • 4 red peppers, halved, cored and deseeded
  • 125 g (4 oz) mini macaroni, cooked
  • 2 plum tomatoes, chopped
  • 125 g (4 oz) Cheddar cheese, grated
  • 2 spring onions, sliced
  • 2 tablespoons chopped parsley
  • 3 tablespoons olive oil
  • salt and pepper

Place the halved peppers in an ovenproof dish, hollows uppermost. Mix the macaroni, tomatoes, cheese, spring onions and parsley in a bowl. Spoon into the peppers, drizzle with the olive oil and season to taste.

Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 35–45 minutes or until the macaroni filling is golden and bubbling.
