• 6 passion fruit, halved, flesh and seeds removed
  • 300 ml (½ pint) Greek yogurt
  • 1 tablespoon clear honey
  • 200 ml (7 fl oz) whipping cream, whipped to soft peaks
  • 4 pieces of shortbread, to serve

Stir the passion fruit flesh and seeds into the yogurt with the honey.

Fold the cream into the yogurt. Spoon into tall glasses and serve with the shortbread.
