Panzanella with Chicken

  • 1/2 ciabatta loaf, torn into pieces
  • 4 tablespoons olive oil
  • 1/2 cucumber, roughly chopped
  • 2 large tomatoes, roughly chopped
  • 2 cooked chicken breasts, about 250 g (8 oz) in total, torn into pieces
  • 1 small red onion, roughly chopped
  • 8 tablespoons ready-made French dressing
  • 2 tablespoons chopped basil
  • salt and pepper
  • Put the ciabatta pieces in a roasting tin and drizzle with the olive oil. Place under a preheated hot grill for 2–3 minutes until golden and warm.
  • Meanwhile, put the cucumber, tomatoes, chicken, onion and dressing in a large mixing bowl. Add the chopped basil and mix well. Season with salt and black pepper.
  • Add the warm ciabatta pieces to the bowl and toss well to coat in the dressing. Serve with extra French dressing, if liked.
