Pan-Fried Red Mullet with Green Beans

  • 300 g (10 oz) green beans
  • 2 tablespoons olive oil
  • 1 red onion, chopped
  • 2 red peppers, cored, deseeded and sliced
  • 4 red mullet fillets, about 150 g (5 oz) each
  • 2 tablespoons hazelnuts, chopped
  • 2 tablespoons chopped parsley
  • Steam or cook the green beans in a saucepan of boiling water until tender. Drain.
  • Meanwhile, heat 1 tablespoon of the olive oil in a frying pan and sauté the onion for 2–3 minutes, then add the red peppers and cook for a further 2–3 minutes.
  • Heat the remaining olive oil in another frying pan and cook the red mullet fillets for 3–4 minutes on each side, until cooked through.
  • Toss the steamed beans and the hazelnuts into the peppers, then take off the heat and add the chopped parsley.
  • Serve the fillets on a bed of beans and peppers.
