Pan-Fried Prosciutto-Wrapped Salmon

  • 2 skinless salmon fillets, about 175 g (6 oz) each
  • 2 tablespoons chopped parsley
  • 2 slices of prosciutto
  • 1 tablespoon olive oil
  • salt and pepper
  • rocket salad
  • lemon wedges
  • Season the salmon well, then scatter with the parsley. Tightly wrap each fillet with 1 slice of prosciutto.
  • Heat the oil in a frying pan, add the salmon and cook over a medium-high heat for 7–8 minutes, turning occasionally, until golden and cooked through.
  • Serve with a rocket salad and lemon wedges.
