Special Diet

  • 1 teaspoon olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 4 plaice or sole fillets, about 150 g (5 oz) each
  • 125 ml (4 fl oz) dry white wine
  • 2 tablespoons wholegrain mustard
  • 200 g (7 oz) crème fraîche
  • 2 tablespoons chopped mixed herbs

Heat the oil in a large frying pan, add the onion and garlic and fry for 3 minutes until softened.

Add the fish fillets and cook for 1 minute on each side. Then add the wine and simmer to reduce by half.

Stir through the remaining ingredients, bring to the boil and simmer for 3–4 minutes until the sauce has thickened slightly and the fish is tender. Serve with rice or new potatoes and steamed vegetables.
