Pan-Fried Peach and Plum Cinnamon Crunch

  • 75 g (3 oz) butter
  • 4 peaches, halved, stoned and cut into wedges
  • 6 plums, halved and stoned
  • 4 tablespoons soft light brown sugar
  • 1 teaspoon ground cinnamon
  • 4 digestive biscuits, crushed
  • ice cream, to serve
  • Heat half the butter in a large, flameproof frying pan, add the peaches, plums and sugar and simmer gently for 5 minutes, turning occasionally, until soft.
  • In a separate saucepan, melt the remaining butter and stir in the cinnamon. Add the crushed biscuits and stir to coat. Sprinkle over the peaches and plums.
  • Place the frying pan under a preheated medium grill and cook for 5 minutes until golden and crunchy. Serve with ice cream.
