Pan-Fried Marsala Fruit and Almonds

  • 25 g (1 oz) unsalted butter
  • 1 peach, halved, stoned and quartered
  • 1 nectarine, halved, stoned and quartered
  • 4 apricots, halved and stoned
  • 2 tablespoons soft brown sugar
  • 2 tablespoons marsala
  • 1 tablespoon clear honey
  • 3 tablespoons toasted flaked almonds
  • vanilla ice cream, to serve
  • Heat the butter in a frying pan, add the fruit and cook over a medium-high heat for 3–4 minutes until softened and golden in places, turning once or twice.
  • Add the sugar and cook, gently tossing, for a further 1 minute, then add the marsala. Heat, stirring, for 1 minute, then add the honey and almonds and stir to coat. Serve with scoops of vanilla ice cream.
