Pak Choi with Chilli & Ginger

  • 1 tablespoon groundnut oil
  • ½ chilli, sliced into rings
  • 1 tablespoon chopped fresh root ginger
  • large pinch of salt
  • 500 g (1 lb) pak choi, leaves separated
  • 100 ml (3½ fl oz) water
  • ¼ teaspoon sesame oil

Heat the oil in a wok over a high heat until the oil starts to shimmer. Add the chilli, ginger and salt and stir-fry for 15 seconds.

Tip the pak choi into the wok and stir-fry for 1 minute, then add the water and continue stirring until the pak choi is tender and the water has evaporated. Toss in the sesame oil and serve immediately.
