Orange Blossom Carrot and Cumin Salad

  • juice of 1 lemon
  • 2 tablespoons orange blossom water
  • 1/2 teaspoon ground cumin
  • 1 teaspoon runny honey or sugar
  • 500 g (l lb) carrots, peeled and grated
  • salt
  • ground cinnamon, for dusting
  • Mix together the lemon juice, orange blossom water, cumin and honey or sugar in a bowl.
  • Place the grated carrots in a serving bowl and pour over the dressing. Season with salt and toss well. Sprinkle over a little cinnamon before serving.
