  • 3 large oranges
  • 3 garlic cloves, finely chopped
  • ½ teaspoon chilli powder
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (about 1 lemon)
  • 150 g (5 oz) Greek black olives
  • salt

Peel the oranges, removing all pith and membrane. Cut the segments into pieces and put into a salad bowl.

Add the garlic to the bowl.

Season with the chilli powder, oil, lemon juice and salt to taste. Gently incorporate the olives.

Chill in the refrigerator for at least 1 hour. Serve cold.
