One-Pan Sausage Roast

  • 8 Cumberland sausages
  • 1 onion, cut into wedges
  • 400 g (13 oz) small new potatoes, halved, or new potatoes, cut into wedges
  • 2 large carrots, washed and cut into chunks
  • 2 rosemary sprigs or 1 teaspoon dried rosemary
  • 3 tablespoons olive or vegetable oil
  • salt and pepper
  • Yorkshire puddings and gravy, to serve (optional)
  • Place the sausages in a large roasting pan and add the remaining ingredients. Mix well to coat everything in the oil and seasoning and spread out in the pan in a single layer.
  • Roast in a preheated oven, 200˚C (400˚F), Gas Mark 6, for 20–25 minutes, turning occasionally, until the sausages are cooked and golden and the vegetables are tender.
  • Serve hot with golden Yorkshire puddings and a jug of hot gravy, if desired.
