Oat-Topped Pear and Ginger Pudding

Ingredients
  • 8 ripe pears, peeled, cored and chopped
  • 4–5 knobs of stem ginger, diced
  • 3 tablespoons stem ginger syrup
  • 50 g (2 oz) coconut oil
  • 45 g (1 3/4 oz) molasses
  • 25 g (1 oz) light muscovado sugar
  • 120 g (4 oz) rolled oats
  • 25 g (1 oz) pumpkin seeds
  • 10 g (1/3 oz) sesame seeds
Directions
  • Place the pears in a shallow ovenproof dish, then sprinkle over the stem ginger. Pour over the stem ginger syrup.
  • Heat the oil, molasses and sugar in a saucepan over a gentle heat, stirring until the sugar is dissolved. Add the remaining ingredients and mix well. Spoon the mixture over the pears.
  • Bake in a preheated oven, 190°C (375°F), Gas Mark 5, for 15–17 minutes until golden.
