Nutty Florentine Bites

  • 100 ml (3 1/2 fl oz) sweetened condensed milk
  • 25 g (1 oz) cornflakes
  • 50 g (2 oz) flaked almonds
  • 25 g (1 oz) glacé cherries, chopped
  • 25 g (1 oz) pecan nuts, chopped
  • 25 g (1 oz) macadamia nuts or blanched, unsalted peanuts, chopped
  • Line 2 x 12-hole nonstick mini muffin tins with paper mini muffin cases or lightly grease, or line 2 large baking sheets with nonstick baking paper.
  • Put the condensed milk in a saucepan over a low heat and warm through, then remove from the heat and stir in the remaining ingredients.
  • Drop about 24 small spoonfuls of the mixture into the prepared mini muffin tins or on to the baking sheets.
  • Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 10–12 minutes until golden. Leave to cool in the tins until hardened, then transfer to a wire rack to cool completely.
