No-Chop Tomato and Rocket Pasta Salad

  • 325 g (11 oz) tricolore trofie
  • 50 g (2 oz) mayonnaise
  • 50 g (2 oz) fromage frais
  • 25 g (1 oz) Parmesan cheese, grated
  • 125 g (4 oz) sunblush tomatoes in oil, drained
  • 75 g (3 oz) rocket leaves
  • salt and pepper
  • Cook the pasta in a large saucepan of salted boiling water according to the pack instructions until al dente. Drain, then cool under cold running water and drain again.
  • Meanwhile, mix together the mayonnaise, fromage frais and Parmesan in a large serving bowl and season. Stir the tomatoes and rocket through the pasta and serve the mayonnaise alongside the pasta.
