Mulled Spice Apple Juice

  • 1.5 litres (2½ pints) pressed apple juice
  • 4 cloves
  • 2 star anise
  • 1 small cinnamon stick
  • 2.5 cm (1 inch) piece of fresh root ginger, peeled and sliced
  • 1 small orange, cut into thin slices
  • clear honey, to taste
  • 50–75 ml (2–3 fl oz) calvados or brandy (optional)
  • Place all the ingredients, except the calvados, in a saucepan and bring to the boil. Simmer gently for 7–8 minutes, until aromatic, then take off the heat.
  • Add the desired amount of calvados, or omit completely for a non-alcoholic version. Serve in a punch bowl, if desired, and pour into heatproof glasses.
