  • 1 bunch of coriander, including roots, roughly chopped
  • 1 bunch of parsley, roughly chopped
  • 125 ml (4 fl oz) extra virgin olive oil
  • 2 garlic cloves, roughly chopped
  • 2 teaspoons white wine vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • salt and cayenne pepper, to taste

Place the coriander and parsley, including the stems and roots, in a food processor or blender. Add all of the remaining ingredients and blend to form a smooth paste.

Use as required or store in an airtight container in the refrigerator for up to 3 days.
