Moroccan Onion and Cumin Beef Burgers

  • 450 g (14 1/2 oz) lean minced beef
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 teaspoons cumin seeds, crushed
  • 1 teaspoon harissa paste (see page 70)
  • small bunch of flat leaf parsley, finely chopped
  • olive oil, for brushing
  • salt and pepper
  • flatbreads
  • Moroccan pickles or chutneys
  • Place the beef, onion, garlic, cumin seeds, harissa and parsley in a bowl and season well. Knead the mixture well, lifting it up and slapping it back into the bowl until slightly sticky, then divide into 8 pieces and shape into firm patties.
  • Lightly brush the patties with a little oil and cook over a barbecue or under a preheated hot grill for 3–4 minutes on each side until cooked through. Serve with flatbreads and Moroccan pickles or chutneys.
