• 225 g (7½ oz) luxury mixed dried fruit
  • 150 g (5 oz) light muscovado sugar, plus a little extra for sprinkling
  • 4 tablespoons malt extract
  • 125 g (4 oz) shredded bran or bran-flake cereal
  • 1½ teaspoons ground mixed spice
  • 350 ml (12 fl oz) milk
  • 200 g (7 oz) self-raising flour
  • 1 teaspoon baking powder

Lift the bread pan out of the machine and fit the blade. Add the dried fruit, sugar, malt extract, cereal, spice and milk to the pan. Stir gently to mix, then leave to stand for 20 minutes.

Add the flour and baking powder, fit the pan into the machine and close the lid. Set to the cake programme. After about 5 minutes use a plastic spatula to scrape the mixture down from the sides and from the corners of the pan.

Test the cake after 50 minutes by inserting a skewer into the centre. If it comes out clean the cake is ready. If not, cook a little longer or complete the programme.

Transfer the cake to a wire rack and sprinkle with extra sugar. Leave to cool. Serve sliced and buttered.
