Mixed Seafood Casserole

Ingredients
  • 4 tablespoons olive oil
  • 1 onion, diced
  • 4 garlic cloves, crushed
  • 100 ml (3 1/2 fl oz) white wine
  • 400 g (13 oz) can chopped tomatoes
  • 200 ml (7 fl oz) fish stock
  • a pinch of saffron threads
  • 400 g (13 oz) pack ready-cooked mixed seafood
  • 2 tablespoons chopped parsley
  • crusty bread, to serve (optional)
Directions
  • Heat the olive oil in a heavy-based saucepan and sauté the onion and garlic for 3–4 minutes. Pour in the white wine and boil for 2–3 minutes, then add the chopped tomatoes, fish stock and saffron.
  • Bring to a simmer, stir in the mixed seafood and chopped parsley and cook for 5–6 minutes to heat through.
  • Serve with crusty bread, if liked.
