Mixed Dried Fruit Compote with Ice Cream

  • 250 g (8 oz) mixed chunky dried fruit, such as apricots, prunes, dates etc.
  • 350 ml (12 fl oz) orange juice
  • 1 vanilla pod, split
  • 8–12 scoops vanilla ice cream
  • ice cream wafers, to serve (optional)
  • Place the dried fruits in a small pan with the orange juice and vanilla pod and simmer gently for 6–7 minutes, stirring frequently, until the fruits have swollen and softened.
  • Scrape into a bowl and set aside to cool slightly. Meanwhile, arrange the ice cream between 4–6 bowls then spoon over the warm dried fruit compote with any juices. Serve with wafers, if desired.
