Mixed Berry Eton Mess

  • 400 g (13 oz) mixed berries (such as blackberries, raspberries, blueberries), plus extra to decorate
  • 400 ml (14 fl oz) strawberry yogurt
  • 300 ml (1/2 pint) crème fraîche
  • 4 tablespoons icing sugar
  • 4 meringue nests, roughly crushed
  • Place half the berries in a blender and blend until smooth. Transfer to a bowl with the strawberry yogurt and stir to mix well.
  • Place the remaining berries in a bowl and mix in the crème fraîche and icing sugar. Add this mixture to the berry and yogurt mixture and swirl through to create a marbled effect.
  • Fold in the crushed meringue and spoon into 4 chilled dessert glasses.
  • Serve immediately, decorated with berries.
